Silverbeet and Pomegranate salad

Pomegranates may take a little effort to prepare, but they’re well worth it. These jewel-like seeds are bursting with flavour and brimming with nutrients.

1 cup silverbeet – shredded finely
½ small zucchini – quartered and sliced
½ red capsicum – cut in long thin slices
1 small carrot – grated
½ cup fresh mint – chopped
1 stalk celery – finely diced
½ cup pomegranate seeds

Dressing
Juice of 1 lemon
½ cup balsamic vinegar
1 tablespoon tahini
Salt and pepper to taste

Prepare salad ingredients and mix together.
Prepare salad dressing ingredients and mix together.
Combine the two.
