Creamy Lentil and Vegetable Stew

- 1 cup red lentils, rinsed and drained 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 sweet potato, peeled and cubed
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric OR Flourish Anti-inflammatory blend
- 1/2 teaspoon ground cinnamon
- 4 cups vegetable broth
- 1 can coconut milk (full-fat for creaminess) or 1 3/4 cups homemade cashew milk*
- Salt and pepper to taste
- Fresh coriander or parsley for garnish
*To make cashew milk, blend 1 cup of soaked and drained cashews with 1 3/4 cups water until smooth.
- In a large pot, combine the chopped onions and a splash of vegetable broth. Sauté the onions over medium heat until they become translucent.
- Stir in the minced garlic, diced carrots, celery, and sweet potato. Cook for a few minutes until they begin to soften.
- Add the ground cumin, turmeric, and cinnamon to the vegetables. Stir well to coat the veggies with the aromatic spices.
- Pour in the vegetable broth and add the rinsed red lentils. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes or until the lentils and vegetables are tender.
- Once the lentils and vegetables are fully cooked, stir in the coconut milk or homemade cashew milk to create a creamy texture. Allow the stew to simmer for an additional 5 minutes, allowing the flavors to meld.
- Season the stew with salt and pepper to taste.
