Creamy Lentil and Vegetable Stew

  1. 1 cup red lentils, rinsed and drained 1 large onion, finely chopped
  2. 3 garlic cloves, minced
  3. 2 medium carrots, diced
  4. 2 celery stalks, diced
  5. 1 sweet potato, peeled and cubed
  6. 1 teaspoon ground cumin
  7. 1 teaspoon ground turmeric OR Flourish Anti-inflammatory blend
  8. 1/2 teaspoon ground cinnamon
  9. 4 cups vegetable broth
  10. 1 can coconut milk (full-fat for creaminess) or 1 3/4 cups homemade cashew milk*
  11. Salt and pepper to taste
  12. Fresh coriander or parsley for garnish

*To make cashew milk, blend 1 cup of soaked and drained cashews with 1 3/4 cups water until smooth.

  1. In a large pot, combine the chopped onions and a splash of vegetable broth. Sauté the onions over medium heat until they become translucent.
  2. Stir in the minced garlic, diced carrots, celery, and sweet potato. Cook for a few minutes until they begin to soften.
  3. Add the ground cumin, turmeric, and cinnamon to the vegetables. Stir well to coat the veggies with the aromatic spices.
  4. Pour in the vegetable broth and add the rinsed red lentils. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes or until the lentils and vegetables are tender.
  5. Once the lentils and vegetables are fully cooked, stir in the coconut milk or homemade cashew milk to create a creamy texture. Allow the stew to simmer for an additional 5 minutes, allowing the flavors to meld.
  6. Season the stew with salt and pepper to taste.
  7. Serve the Creamy Lentil and Vegetable Stew in bowls, garnishing with fresh coriander or parsley for added freshness and aroma.
