Mango Black Bean Salad

This refreshing salad is a perfect way to enjoy the sweet and tangy flavours of ripe mangoes, combined with the protein, fibre and iron of the black beans and the fresh crunch of peppers and onions. The lime juice adds a bright and zesty flavour without the need for any added oil. Enjoy!


• 2 ripe mangoes, diced
• 1 can black beans, rinsed and drained
• 1 red bell pepper, diced
• 1/2 red onion, diced
• 1 jalapeño pepper, seeded and minced
• 1/2 cup chopped fresh cilantro
• Juice of 1 lime
• Salt and pepper, to taste

  1. In a large mixing bowl, combine the diced mangoes, black beans, red bell pepper, red onion, jalapeño pepper, and cilantro.
  2. Squeeze the juice of 1 lime over the top of the mixture, and sprinkle with salt and pepper to taste.
  3. Toss everything together until the ingredients are evenly mixed and coated with the lime juice.
  4. Serve the salad chilled, as a side dish or as a topping for tacos, burritos, or bowls.
