Orange, Coconut and Choc Chip Cup Cakes


2 organic oranges
1 cup organic brown sugar
1 tablespoon vanilla paste
1 small can coconut milk
2 cups almond flour/meal
2 cups gluten free flour
1 teaspoon baking powder
1 teaspoon cream of tarter
1 cup shredded coconut – optional
½ cup organic vegan choc chips – optional


Place the oranges into a small saucepan, cover with water and a lid. Boil for approximately 2 hours or until very soft. Keep topping up with water, so they don’t boil dry. Allow to cool after cooking.

Place oranges, sugar, vanilla paste, & coconut milk into a food processor and blitz.

Transfer to a large mixing bowl, add all the remaining ingredients and mix together well.

Prepare a muffin tray with papers, fill with orange mixture and then bake in a moderate oven, 160-170 degrees C. Slightly cooler than a normal oven, helps them to hold the rise better. Bake until firm to touch and golden brown.
