Raisin Cookies

2 cups almond meal

1 cup buckwheat flour or another gluten free flour

1 teaspoon baking powder

1 cup coconut

½ cup coconut sugar

1 whole packet Sunbeam raisins

1 250g bottle apple-sauce

1 tablespoon vanilla paste

Place all dry ingredients into a bowel. Mix together

Add raisins, and make sure they are all mixed through well.

Add apple-sauce and vanilla paste. If the mixture is too dry, add a splash of non-dairy milk.

Preheat oven 180 degrees and prepare a non-stick large tray.

Take golf ball sizes dollops of mixture and place onto the tray. Allow to cook until golden brown or approximately 25 minutes.
